italian chicken soup

after stumbling upon this soup, i have made it THREE different times.  THREE.  that is a lot of times for me to make something in a few months time.  just sayin’.  i have modified the original recipe to make it a bit easier to throw together.  the amts below will work for about 4 people.  double, quadruple, as needed. i have also made a few modifications to the original, mainly with the sauteing oregano in evoo.  for the first time, i didn’t have fresh oregano on hand and used the dried stuff, as a substitution.  it burned and did not turn out all that well.  i never really tried it again and can’t taste that the soup is missing anything.  also, the jalapeño does not add much heat, so don’t be intimidated.  on to...

jalapeño cheese cornbread

the perfect compliment to gumbo is this cornbread.  this is another dish where tom and i had to negotiate.  i love sweet cornbread; tom calls sweet cornbread “cupcakes” and asks for a side of frosting.  i cut back on the sugar in the recipe and added cheese…  two kinds!  definitely a win-win for the shoemaker household. slightly adapted from: allrecipes.com 1 1/2 c cornmeal 1/2 c flour 2 tbsp sugar 2 tsp baking powder 1 tsp salt 3 jalapeño peppers, seeded and finely chopped.  (leave the seeds and the white parts in for kicked up cornbread) 2 eggs 1 1/2 c buttermilk 1/4 c evoo 1 1/2 c shredded cheese (i used mild cheddar and pepper jack) in a bowl, combine the first seven ingredients.  in another bowl, whisk the eggs, buttermilk and oil....

pico de gallo

as mentioned in my previous post, i went a little crazy on the dips for quesadilla dinner last week.  pico de gallo is very simple to make and this is just one example of several variations.   This recipe makes about a cup and a half of pico.  Multiply as needed! 4 roma tomatoes, seeded, pulp removed and chopped.  (This is important, or you’ll end up with pico soup!) 1/4 sweet onion or 1/2 red onion, finely chopped. (Use whatever kind of onion that you prefer!) small handful of finely chopped cilantro 1 jalapeño, finely chopped.  (If you want more heat, leave the seeds in.) 1 tsp minced garlic dash or two of garlic powder dash or two of  ground cumin 1/2 lime, freshly squeezed Combine all ingredients in a bowl.  Serve immediately.  For...
