chocolate cupcakes

hi, my name is jess and i am a chocoholic.  (hi, jess)  i’ll take chocolate pretty much anyway that i can get it.  i made up a batch of these cupcakes for a superbowl party this weekend.  with all of the junkfood available for consumption, these would just be another log on the fire.  🙂  i’d highly recommend making a batch of them for your valentine. the cupcakes are from martha stewart’s recipe for one bowl chocolate cupcakes and it is true, they really are.  the frosting recipe is a swiss meringue buttercream (swbc), my second attempt at this type of frosting.  if you’ll recall, the first one that i used had too much butter.  i found a very helpful tutorial on  i am much happier with the results, but i still want...

tres leches cupcakes

i have a dear sister who is part pirate, part mexican and 100% awesome.  it’s her birthday this wednesday and i got the honor of making her a birthday dessert.   her first requirement was that she wanted cupcakes.  (little did she know that her husband picked up a sweet pirate cupcake kit a while back.  i’m bummed i didn’t get a pic of one with a pirate topper in it. 🙁 )  i mentioned tres leches cupcakes to her and she got REALLY excited. so to wrap it up: pirates + tres leches + cupcakes = best way to celebrate the best. sister. ever!  happy birthday, bran! recipe slightly modified from 8 eggs, separated 1 1/3 c sugar 1 tsp vanilla extract 1 1/4 c flour 3 tbsp cornstarch 1 tsp baking powder...

mountain dew cupcakes

so this guy named paul often comes over to our apartment and more times than not, raids the mountain dew in the fridge.  it was paul’s birthday last week and to celebrate, i made up a batch of mountain dew cupcakes.  i thought it was the only appropriate way to celebrate such a cool guy. 🙂 happy birthday, paul! 🙂 adapted slightly from slush cupcakes (makes 1 dozen) 1 stick butter 1 c sugar 2 eggs 1/2 c mountain dew juice from 1 lemon and 1 lime zest from 1 lemon and 2 limes (separated into two piles) 3/4 tsp orange extract 1 1/3 c flour 3/4 tsp baking powder 1/8 tsp salt beat butter on medium for 30 seconds. add sugar and zests.  beat on medium-high until light and fluffy. add eggs one...
