i have wanted to make chocolate mousse pie for a long time.   i decided that this year’s super bowl would have be the perfect opportunity.  i was so excited to try it, i forgot to take a picture!  this is the “after” picture.  you’ll just have to try this recipe for yourself and see how you like it. 1 9″ pie shell, baked (see recipe below) 1 c semisweet chocolate chips 1/4 c white sugar 4 tbsp water 1 tsp unflavored gelatin 3 eggs 1 tsp vanilla extract 1/2 c heavy whipping cream 2 tbsp white sugar 2 tbsp unsweetened cocoa powder 2 tbsp confectioner’s sugar 1 c heavy whipping cream 1/2 tsp vanilla extract sprinkle the gelatin on top of 2 tbsp of water.  separate the eggs. in a double boiler, heat...

chocolate wows

so i was in the mood for cookies.  really, i think i am in a perpetual mood for cookies/chocolate/sweets.  🙂  i found these babies in my good housekeeping cookbook.  it’s the first recipe that i’ve ever made from this cookbook and i’m pleased with the results! 1/3 c all-purpose flour 1/4 c unsweetened cocoa 1 tsp baking powder 1/4 tsp salt 3/4 c semi-sweet chocolate chips 1/2 c butter 2 eggs 3/4 c sugar 1 1/2 tsp vanilla 2 c pecans, chopped 1 c chocolate chips preheat oven to 325°.  grease two large cookie sheets.  in a small bowl, mix together flour, cocoa, baking powder and salt. in the microwave, melt 3/4 c chocolate chips and butter in 30 sec. increments on high heat.  stir after every 30 sec.  allow to cool. in a...

sopapilla cheesecake dessert

last friday night was date night, as usual, and we had tickets to go to the local comedy club to see John Pinette (huh-freakin-larious!).  instead of worrying about making it to the restaurant and out in time for the show, i decided to eat dinner in, consisting of fajitas, bran’s fantastic salsa verde, and strawberry lime margaritas.   i relied on my trusty recipe source, allrecipes.com to find a tasty recipe to accompany dinner.  this recipe is what i found.  just in case if you’re wondering, i know i did, a sopapilla is this. 12 oz. cream cheese, softened 3/4 c sugar 3/4 tsp vanilla extract 8 oz. can crescent roll dough 1/4 c melted butter 1/4 c white sugar 1/2 tsp ground cinnamon 1/8 c sliced almonds preheat oven to 350°. beat the...

coconut macaroons

found this delicious recipe on the back of a bag of coconut and the result was pretty delicious. 🙂  they taste like little almond joys! 5 1/3 c coconut 2/3 c sugar 6 tbsp flour 1/4 tsp salt 4 egg whites 1 tsp almond extract mix coconut, sugar, flour, and salt in large bowl until the coconut is evenly coated.  stir in egg and almond extract until well blended.  drop by well rounded tablespoonfuls onto a non-stick baking sheet. bake at 325° for 20 min. or until edges of cookies are golden brown.  immediately remove from cookie sheets to wire racks.  cool completely. to make them extra delicious, dip them in chocolate! melt one cup of chocolate chips in a ramekin.  dip macaroons  halfway in chocolate, scrape excess chocolate off the bottom.  place on wax...

peanut butter marbled brownies

these are a wonderfully rich treat.  they’re best consumed with a glass of milk. 6 oz. cream cheese, softened 1/2 c peanut butter 1/4 c white sugar 1 egg 2 tbsp milk 1 c butter or margarine, melted 2 c white sugar 2 tsp. vanilla 3 eggs 3/4 c unsweetened cocoa powder 1 1/4 c all-purpose flour 1/2 tsp baking powder 1/4 tsp salt 1 c semi-sweet chocolate chips preheat oven to 350 degrees, grease a 9 x 13 pan in a medium bowl, beat cream cheese, peanut butter, 1/4 c white sugar, 1 egg, and milk until smooth.  set aside in a large bowl, mix together melted butter, 2 c white sugar, and vanilla; mix in the remaining 3 eggs one at a time, beating well after each addition.  combine flour, cocoa, baking...
