i’m pretty good about keeping things in stock around the house.  i’m slightly ocd and making out a grocery list for my weekly trip to publix.  it usually takes a half hour or so and consulting several blogs, the publix ad and my husband to see what he’s hungry for. (which usually ends in an “i don’t care.”)  i love his willingness to eat whatever i make. 🙂 then there are the times that i forget to stock up on things.  things like taco seasoning.  i’m here to tell you that it’s really simple to make because you’ll more than likely have all of this stuff in your seasoning cabinet.  make a large batch and throw it in anything that you’d like to instantly give a smoky, spicy flavor.  ground beef, shredded pork, chicken.,...

chicken zucchini bake

gumbo

tom got me a crock pot for christmas and i’ve really been enjoying the brand new cooking world opened by it!  i started off on new years day making gumbo, not jambalaya.  the main difference between gumbo and jambalaya is that gumbo is a roux-based soup and jambalaya is a rice-based dish.  more about the roux later… i wanted to eat our gumbo during game time, so i didn’t have a 7-9 hour window that the original recipe called for.  i pre-cooked my chicken before putting it in the crock pot, which cut down the cooking time significantly.  i also used tom’s favorite cajun style andouille, which is pre-cooked.  if you do have all-day, you can go ahead and throw everything (minus shrimp) in the pot un-cooked. 3 tbsp flour 3 tbsp oil 1/2...

welcome to my new favorite chicken dish. every week, i go through the publix ads online and most every week they feature some sort of recipe using products that they have on sale.  last week’s recipe was “party chicken.”  the only reason i tried it was to figure out what the hoopla was about panko bread crumbs.  whenever i see a recipe that calls for them, i just substitute bread crumbs and call it good.  but i broke down and bought the panko bread crumbs…  they’re very light and crunchy and brown very nicely.  from now on, i will be substituting panko for bread in every recipe calls for any kind of crumbage. 🙂 anyways, moving past the crumbs… this dish is down right delicious and is very easy to make.  tom kept saying...

chicken tortilla soup

to celebrate the first day i wore a jacket to work this fall, i made a pot of chicken tortilla soup.  this soup is quick, simple and delicious.  i serve it over crushed tortilla chips and top it with sour cream and shredded cheese. adapted from allrecipes.com 1 lb. chicken (i used chicken cutlets, chopped up into bite-sized pieces.  if you have more time, parboil the chicken, shred it and skip to step 2.) evoo 1 tsp minced garlic 1 tsp ground cumin 1 chicken stock in a box (32 oz.) 1 c frozen corn kernels 1 c chopped onion 1/2 tsp chili powder 2 tbsp lemon juice 1 c chunky salsa tortilla chips sour cream shredded cheese in a large pot over medium heat, saute the chicken in the oil for 5 min....

i am a big fan of rachael ray… and was very excited recently to watch her in the mornings on some extended time off from work.  this was one of the recipes that she featured… which included fish.  it almost made me want to try the recipe as it was.  however, i chickened out (no pun intended) and the voice of reason in my head (tom :)) said to go for the chicken.  so here is my version of the recipe, slightly adapted from the original.  this recipe also includes a bonus recipe for pico de gallo! 4 small vine-ripened tomatoes, seeded and finely chopped 1 large jalapeño pepper, seeded and finely chopped (leave the seeds in for more heat!) 1/2 small red onion, finely chopped a small handful of cilantro leaves, finely chopped...
