jalapeño cheese cornbread

the perfect compliment to gumbo is this cornbread.  this is another dish where tom and i had to negotiate.  i love sweet cornbread; tom calls sweet cornbread “cupcakes” and asks for a side of frosting.  i cut back on the sugar in the recipe and added cheese…  two kinds!  definitely a win-win for the shoemaker household. slightly adapted from: allrecipes.com 1 1/2 c cornmeal 1/2 c flour 2 tbsp sugar 2 tsp baking powder 1 tsp salt 3 jalapeño peppers, seeded and finely chopped.  (leave the seeds and the white parts in for kicked up cornbread) 2 eggs 1 1/2 c buttermilk 1/4 c evoo 1 1/2 c shredded cheese (i used mild cheddar and pepper jack) in a bowl, combine the first seven ingredients.  in another bowl, whisk the eggs, buttermilk and oil....

party chicken

welcome to my new favorite chicken dish. every week, i go through the publix ads online and most every week they feature some sort of recipe using products that they have on sale.  last week’s recipe was “party chicken.”  the only reason i tried it was to figure out what the hoopla was about panko bread crumbs.  whenever i see a recipe that calls for them, i just substitute bread crumbs and call it good.  but i broke down and bought the panko bread crumbs…  they’re very light and crunchy and brown very nicely.  from now on, i will be substituting panko for bread in every recipe calls for any kind of crumbage. 🙂 anyways, moving past the crumbs… this dish is down right delicious and is very easy to make.  tom kept saying...

pizza dogs

i think i may have mentioned this before, but i was a picky eater growing up.  dear ol’ mom was nice enough to keep some things on hand for me, including freezer chicken patties (which i can prepare several ways!) and hot dogs.  this is one of my favorite ways to have a hot dog.  recent trips to the dog of nashville have inspired me to revisit some of my favorite ways to eat a dog. this recipe is for four hot dogs, multiply as needed. four hot dog buns, toasted 1/2 c pizza sauce 4 hot dogs (i prefer koegel’s viennas, serve the curve and the crunch! thanks to mom and dad for delivering to nashville :)) italian seasoning 1 c shredded mozzarella cheese 1/2 c shredded parmesan cheese pre-heat broiler. in a medium frying...

sausage, egg and cheese bagels

this is another “food i miss from michigan” post.  mcdonald’s breakfast down here excludes sausage, egg and cheese bagels on its menu.  the only good reason to have mcdonald’s breakfast is to splurge, and i think the bagel is the best way to do it. this recipe may be slightly healthier than mcdonald’s.  i can tell you that it is pretty darn delicious and is available after 10:30 a.m. :). this recipe prepares two bagels.  you can adjust the recipe accordingly. 2 thomas bagel thins, toasted 2 slices of co-jack cheese, melted on bagels in toaster oven 6 oz. breakfast sausage (half a tube), quartered and formed into very thin patties, slightly larger than the bagel. 3 eggs salt and pepper to taste cook the breakfast sausage patties until brown all of the way...

ranch bacon pasta salad

pasta salad from the box is really good for hot summer months when you need something to go with dinner in a pinch.  i decided to kick it up a notch and make it from scratch.  it’s my first pasta salad (other than making mom’s pasta crab salad, which is something that i’ll have to add soon!) 1 12 oz. box whole wheat pasta 10 slices bacon, cooked until crispy and chopped 1 c mayo 1 pkg. ranch dressing mix 1/4 tsp garlic powder 1/2 tsp pepper 1/2 c milk 1 pkg. cherry tomatoes 1 c shredded cheddar cheese bring a large pot of water to boil and cook pasta until al dente.  drain and rinse with cool water. in a large bowl, mix mayo, ranch dressing mix, garlic powder and pepper.  stir in...

breakfast pizza

as i have said before breakfast is our favorite meal of the day.  breakfast was served at our late morning wedding reception and i could go on and on about how much we LOVE breakfast.  but i won’t.  i’ll just share another shoemaker-approved breakfast dish. Adapted from SmittenKitten 1 pizza crust (however you prefer to make it)* 1/4-1/2 lb. ground breakfast sausage 1/4 c grated parmigiano reggiano cheese 1 c grated mozzarella 3 eggs salt and pepper to taste green onion parsley flakes * i picked up an awesome pre-made dough from publix that was just waiting to be kneaded and topped. pull dough out of the fridge 1-2 hours before you want to start making pizza. pre-heat oven to 500°. brown sausage in a pan.  place on a paper towel lined dish to drain...

spinach artichokeless dip

i’m all for food that is cheesy and delicious.  this definitely fits in that category.  when we go to applebee’s, tom normally orders the appetizer sampler platter and shares his spinach artichoke dip with me, so i can pick out the artichokes for him.   it’s a win-win situation.  you can easily add artichokes to this recipe, just drain a can of them and chop them up into bite sized pieces.  we keep things artichoke free around here, though. 🙂 you could use the base and make a seafood dip substituting the spinach for crab meat, lobster pieces and shrimp.   i’ll have to try that next! 1/2 jar of roasted garlic alfredo sauce 1/3 c grated parmeggiano reggiano cheese 1 1/2 c grated mozzarella cheese 1 10 oz. package frozen chopped spinach, thawed...

mac n’ cheese
