cheese biscuits

my favorite part about goulash growing up were the cheese biscuits that my mom served with it.  cheese biscuits trumped quite a few dishes for me growing up.   the best part of the dish are the two pieces in the center.  i wish that somehow all of the pieces could be middle ones. 🙂 source: mom 4 tbsp butter 1 tube refrigerator biscuits, 8 count, regular size (not the “big” ones.) velveeta cheese garlic powder, to taste microwave 4 tbsp butter in a 9″ pyrex pie dish, until melted. arrange biscuits in the dish. top with velveeta cheese (pictured above). lightly sprinkle garlic powder on top. bake according to the instructions found on the biscuit tube.  or until the edges brown slightly....

monte cristo folds

monte cristos are delicious.  bennigan’s makes a pretty mean one, even though there is no way i could ever eat one by myself.  these are my new favorite monte cristo… the portion size is reasonable and the egg wash on top just makes these delicious! 1/4 lb, chopped deli ham 1/4 lb. chopped deli turkey 1/2 c mozzarella cheese, chopped 1/2 c cheddar or american cheese, chopped 8 biscuits (from the fridge tube or frozen leftovers, thawed) 1 egg 1 tbsp milk 1/4 tsp cinnamon 1/4 tsp nutmeg powdered sugar raspberry jam heat oven to 375°. in a medium bowl, mix ham, turkey and cheese. separate dough into 8 biscuits.  press or roll each to form 6-7″ round. place 1/3 c ham mixture on one side of each biscuit round.  fold dough over filling....

sausage, biscuits and gravy

this is another tom dish.  he has been hungry for sausage, biscuits and gravy for a while.  last week, he got his wish. 🙂 biscuits: 4 c self-rising flour* 1 tbsp white sugar 1 tbsp baking powder 2/3 c shortening 2 c buttermilk 1/4 c buttermilk *  an alternate for self rising flour would be: 4 c all-purpose flour, 2 tsp salt, and 2 tsp baking powder, in addition to the 1 tbsp baking powder that’s already called for. preheat oven to 400°.  lightly grease two baking sheets. in a large mixing bowl, combine flower, sugar and baking powder; stir well.  cut in shortening until mixture resembles coarse cornmeal.  add 2 c buttermilk and mix just to moisten. roll out dough to 1″ thick and cut into biscuits.  place biscuits on prepared baking sheets;...
