pear and greens salad

moving to a healthier part of thanksgiving 2010 ūüôā pear and green salad was inspired partly by salad at my favorite chicken tender place: maniac’s, partly by strawberry spinach salad and partly because pears are now in season. the spiced pecans in this salad are very similar to the ones served at maniac’s. ¬†be sure to make extra of these, because you’ll want to munch on them! ¬†they store really well in the fridge, after cooling. adapted slightly from for the salad: 1 package of mixed greens 1 pear, cored and chopped 1/2 c spiced pecans 1/2 c crumbled feta (or bleu cheese) 1 recipe celery seed dressing place salad greens in a large serving bowl, followed by feta, pecans and pears. ¬†toss with dressing or serve on the side, whichever you prefer....

roasted pepper pasta salad

summer is a great time for pasta salad of any kind. ¬†since i live in the south now, i get a whole lot of summer weather, which means that i get to try lots of pasta salad recipes. ¬†this is one was featured on the cover of a recent food network magazine and the bocconcini really grabbed my attention. ¬†(i can’t imagine why… :)) adapted slightly from food network magazine 12 oz. rigatoni 2 bell peppers, halved, stemmed and seeded 6 cloves garlic, unpeeled 1/3 c almonds 1/3 c evoo 1 lemon 8 oz. bocconcini (small mozzarella balls) 1 bunch fresh basil, leaves torn pre-heat the broiler to high. ¬†bring a pot of salted water to boil. ¬†add the pasta and cook as the label directs. ¬†drain and rinse under cold water to stop...

ranch bacon pasta salad

pasta salad from the box is really good for hot summer months when you need something to go with dinner in a pinch. ¬†i decided to kick it up a notch and make it from scratch. ¬†it’s my first pasta salad (other than making mom’s pasta crab salad, which is something that i’ll have to add soon!) 1 12 oz. box whole wheat pasta 10 slices bacon, cooked until crispy and chopped 1 c mayo 1 pkg. ranch dressing mix 1/4 tsp garlic powder 1/2 tsp pepper 1/2 c milk 1 pkg. cherry tomatoes 1 c shredded cheddar cheese bring a large pot of water to boil and cook pasta until al dente. ¬†drain and rinse with cool water. in a large bowl, mix mayo, ranch dressing mix, garlic powder and pepper. ¬†stir in...

strawberry spinach salad

when you first see the ingredients to this salad, you’ll think eww. ¬†that sounds awful. ¬†but it’s not. ¬†it’s quite delicious. ¬†in fact, it was the first ranch dressing free salad i ever liked! 2 pkg. fresh baby spinach, rinsed and dried 1 1/2 qt. fresh strawberries, sliced dried cherries slivered almonds dressing: 1/2 tsp paprika 1/4 c apple cider vinegar 1/2 c sugar 1/2 c vegetable oil 1 tbsp poppy seeds 1 tbsp sesame seeds in a large serving bowl, toss together the spinach, strawberries, cherries and almonds. ¬†refrigerate¬†until ready to serve. in a salad dressing shaker, combine all ingredients shaking well. ¬†refrigerate until ready to serve. when ready to serve, toss salad with dressing.* *if you’re not planning on eating the salad in one sitting, i would not recommend tossing the dressing...
