one of the things that i miss the most about tennessee is publix.  i can’t say enough wonderful things about the store.  one of my favorite things to pick up there was pre-made pizza dough and top it with just about any topping i’d like.  pre-made dough is non-existent in wa.  i’m working on a replacement recipe (aka future post), but it is not as easy as going to publix and buying it pre-made in the bakery.  just sayin. i suppose that this is a “things that i miss about michigan” post, too.  the inspiration for chicken mediterranean pizza comes from cottage inn pizza.  i’ve never seen a pizza like it on a menu since moving, so of course, i had to re-create it at home. cornmeal pre-made pizza dough (or any form of...

cajun jambalaya pasta

tom and i love going to the cheesecake factory.  forget about the endless search for a parking spot.  forget about the crazy wait. forget about the overpriced slices of cheesecake.  it’s entirely worth it.  the far away parking spaces help to burn the extra calories.  the wait is spent at the apple store.  the cheesecake is devoured bite by bite and lasts a few days in our fridge at home.  the food is out of this world! tom’s favorite is the cajun jambalaya pasta.  my favorite is adam’s peanut butter cup fudge ripple cheesecake.  i figured out how to make the pasta but am nervous to even begin to find a recipe for the cheesecake.  i think i’ll just stop at the pasta and opt out of turning into the michelin woman. slightly adapted...

i’m pretty good about keeping things in stock around the house.  i’m slightly ocd and making out a grocery list for my weekly trip to publix.  it usually takes a half hour or so and consulting several blogs, the publix ad and my husband to see what he’s hungry for. (which usually ends in an “i don’t care.”)  i love his willingness to eat whatever i make. 🙂 then there are the times that i forget to stock up on things.  things like taco seasoning.  i’m here to tell you that it’s really simple to make because you’ll more than likely have all of this stuff in your seasoning cabinet.  make a large batch and throw it in anything that you’d like to instantly give a smoky, spicy flavor.  ground beef, shredded pork, chicken.,...

one of my favorite food blogs is the pioneer woman.  her blog is amazing and talks about a lot more than just food.  when she posted this recipe, i knew i had to try it.  my mouth was watering! this dish is great for any season and is also multi-functional!  (never thought that i’d say that about food, but it really is!)  you can serve it on a sandwich, tom style with bbq sauce, pickles and melted pepper jack cheese, in a taco, on nachos, or use it for pretty much anything you’d want to put pulled pork on.  i’m thinking that it might even be great on a pizza… mmm. i’ve adapted the original recipe to be a two-person friendly, crock pot gig, with leftovers for one meal.  if you want to make...

i wish that i could be italian… making meatballs, homemade pasta and cannolis filled with marscapone cheese.  but i’m not.  i was, however, elated when i received “the italian issue” of the food network magazine a few months back.  it was full of all things italian and made me a very happy italian wannabe. anyways, this is a really fun dish to throw together.  i thought that i was making it for two, by significantly cutting down the original amounts listed in the article.  let’s just say that moderation isn’t my strong suit when cooking.  i was going for a 8″ square dish, but it made enough for a 9×13″ pan and we had it for leftovers and lunch.  a few times.  it was still very delicious!  this dish is also very customizable, based on your...

shrimp pasta

i’m sorry that i’ve been away, shoebox!  the flu hit our, which resulted in a tasty pot of this.  then the parents came to visit for a weekend, which resulted in lots of eating out and a batch of these. going back a few weeks to before things got crazy and busy, i made tom this delicious pasta dish for valentine’s day.  it was a great success!  it was very light and not too creamy, which tom prefers.  it also had some kick to it, but it wasn’t too hot, which i prefer.  this dish is great for any season!  it is also very quick to throw together.  i cut some time off by removing seeds and pulp from tomatoes with a grapefruit spoon.  it comes in handy for this dish and others, like pico...

spaghetti and meatballs

ok, this is a true story.  when i was younger i wanted no part of spaghetti and meatballs.  i’d have noodles, butter and cheese.  my how times have changed.  at times, i wish i were italian so i could well, be italian.  i’ll settle for cooking and loving their food. i originally made the meatball portion of this recipe and threw them in with a jar of prego sauce.  i didn’t think it was shoebox worthy, because i cheated with the sauce.  then i revisited the recipe and made the sauce.  i am never buying sauce from the jar again! side note: i’ve always loved sweeter tomato sauces (like italia gardens).  i was able to watch buddy valastro (the cake boss) on regis & kelly one snow day morning a few weeks ago.  he...
