well, holy cow, blog, it has been a good long while!  things have been a tad bit busy around here… the most wonderful, exhausting and rewarding kind of busy.  meet ben! beautiful baby, you’re sweeter than strawberry pie! every day is a deeper shade of blue, when i’m with you. 🙂 i’m pretty sure that ben beats this strawberry pie, but it is pretty darn tasty.  give it a try this summer! source: my mom crust: i used the french crust, used in the chocolate mousse pie. i’m a bigger fan of my mom’s crust with this pie.  her recipe is as follows: 1 1/2 c flour 2 tbsp sugar pinch salt 1/2 c oil 2 tbsp milk mix together dry ingredients.  stir in oil and milk.  press in pie dish and bake at 350º...

zucchini bars

cravings are in full swing for this pregnant lady.  it started with anything peach, and then pickles, then to watermelon sorbet, then vernors, cream soda and my current craving is zucchini.  i was telling my mom about my cravings and she said, just plain zucchini??   no, not just straight-up zucchini, it needs to be covered in cheese or in bar form.  i don’t think there is any other way to eat zucchini!  well, maybe bread. this recipe was a summer staple in our house growing up.  at the end of summer, we’d have all kinds of vegetables coming out of our ears and mom would make this delicious treat.  it turned out just like i remembered and i feel a little less guilty about eating them, because they are full of veggies! source:...

we’re snowed in.  and i LOVE every second of it.  we’ve both been working from home, which is awesome.  not any different for me, but it is very nice to have tom around!  we’ve also been loving on our new puppy, lucy… and so now i must do the obligatory new dog bragging:  isn’t she just adorable? ok, so back to the recipe.  i did run out of caramel sauce for my coffee.  i’m one of those people that fills my coffee with a bunch of sweet and creamy stuff, to ensure that it doesn’t taste much like coffee at all.  no amount of snow is going to keep me from a proper caffeine fix sugar buzz. source: bakingdom *please note, we are not the kind of people that keep our christmas tree up year round…...

aunt deb’s cheesecake

when i first tried my aunt’s cheesecake, it was love at first bite.  my aunt and i share the same chocolaty sweet tooth, so it was not a huge surprise that this cheesecake is pure awesomeness.  i cannot even begin to describe how perfect this cheesecake is.  it has a very unique blend of light fluffiness, but is still very rich.  you can top it off with fruit topping, chocolate/caramel syrup and/or whipped cream.  or of course, you can eat it plain, because it can definitely hold it’s own! i tried to make a lighter version of the recipe using neufchatel cheese and light sour cream.  it doesn’t affect the texture too much.  so if you want to feel a little less guilty about indulging in this dessert, i’d definitely recommend the substitutions.  the...

  thanksgiving week is upon us!  tom and i have a lot to be thankful for; we have been very blessed in this crazy whirlwind of a year.  this thursday, we’ll be thinking of our family in michigan and most definitely missing them. tradition is something that will make me feel a lot closer to family.  we’ll be having a brown paper bag turkey, served on a “dump platter”.   we’ll watch the macy’s thanksgiving day parade. well, hello again, blog!  i’m happy to report that things are back to “normal” at the shoebox.  it was hacked a month or so ago, and we’ve been working on moving content around and finding a suitable server.  (hello, godaddy!)  the shoebox is back with one more nashville recipe.  then, we get to move onto the wa ones! i made these cookies for my dad on his last visit to nashville.  they’re all of his favorite cookies, rolled into one!  after a ten hour drive to nashville from michigan, the least i could do was have a batch of cookies ready for him to eat.  if cookies could make it through the mail, i’d probably send a batch of these to him tonight to celebrate the big buck that he got today and that...

wow.  what a whirlwind we’ve been through since may.  we packed up everything and moved across the country.  (when i say across, i really do mean it!  hello, pacific northwest!) it is nice to finally be settled and back into the “groove” of things.  and by groove, i mean my ocd self is happy and content to know where everything in the house is again. i’ll be playing catch-up on my blog for the next few weeks, so i hope you enjoy the backlog of the recipes that i have created over the past few months!  fall is on the way, and i’m eager to make soups and lots of apple-based dishes.  so let’s get going on these spring and summer recipes to make way for fall! i have a go-to key lime pie...

we love to order chinese food from corner asian cafe, a restaurant just down the road.  they always give us a ton of delicious food, which makes for at least two meals.  i always order white rice to go with my mu shu chicken and never eat it.  i finally found the perfect use for it! this pudding rivals my favorite pudding from dilly deli in auburn hills.  it is creamy and very simple to make.  you can add raisins, if you’d like, but it is also good plain. source: allrecipes.com 2 c leftover white rice 2 c milk, divided 1/3 c white sugar 1/4 tsp salt 1 egg, beaten 1 tbsp butter 1/2 tsp vanilla extract in a medium saucepan, combine rice, 1 1/2 c milk, sugar and salt.  whisk over medium heat...
