sausage, egg and cheese bagels

this is another “food i miss from michigan” post.  mcdonald’s breakfast down here excludes sausage, egg and cheese bagels on its menu.  the only good reason to have mcdonald’s breakfast is to splurge, and i think the bagel is the best way to do it. this recipe may be slightly healthier than mcdonald’s.  i can tell you that it is pretty darn delicious and is available after 10:30 a.m. :). this recipe prepares two bagels.  you can adjust the recipe accordingly. 2 thomas bagel thins, toasted 2 slices of co-jack cheese, melted on bagels in toaster oven 6 oz. breakfast sausage (half a tube), quartered and formed into very thin patties, slightly larger than the bagel. 3 eggs salt and pepper to taste cook the breakfast sausage patties until brown all of the way...

breakfast pizza

as i have said before breakfast is our favorite meal of the day.  breakfast was served at our late morning wedding reception and i could go on and on about how much we LOVE breakfast.  but i won’t.  i’ll just share another shoemaker-approved breakfast dish. Adapted from SmittenKitten 1 pizza crust (however you prefer to make it)* 1/4-1/2 lb. ground breakfast sausage 1/4 c grated parmigiano reggiano cheese 1 c grated mozzarella 3 eggs salt and pepper to taste green onion parsley flakes * i picked up an awesome pre-made dough from publix that was just waiting to be kneaded and topped. pull dough out of the fridge 1-2 hours before you want to start making pizza. pre-heat oven to 500°. brown sausage in a pan.  place on a paper towel lined dish to drain...

bran sent me a link to this blog the other day.  i immediately fell in love.  it’s so cool to find another person who appreciates putting time into something that may be considered easy.   it’s so simple to run out to the store and buy a box of pop-tarts, but it’s so much cooler, tastier and healthier to make them on your own! so i notified tom that i could make pop-tarts from scratch.  he had a reaction much like the blogger’s husband… “you can do what?!?”  next time, i’m planning on making a double (or triple batch) and freezing them to bake them when i want to. so without further adieu, homemade pop-tarts. 🙂 pastry: 2 c all-purpose flour (substitute with whole-wheat for a slightly healthier version.) 1 tbsp sugar 1 tsp...

this recipe would qualify as “semi-homemade”.  however, when you’re hungry for breakfast in the morning, i think the quicker the prep time, the better.  🙂 1 tube reduced fat croissant rolls apple pie filling or fried apples from cracker barrel or chopped apples with brown sugar and cinnamon cinnamon frosting (see blog: sugar cookies and frosting) preheat oven to temperature indicated on croissant packaging. chop apples in apple filling down to small pieces. spoon 1 tbsp of apples onto the wide end of the croissant. sprinkle with cinnamon. roll up to the small end. place on a non-stick baking sheet. bake as the croissant packing calls for, or until golden brown on the edges. while croissants are baking, prepare a small serving of frosting. when croissants are finished baking, remove from oven and place...

buttermilk pancakes

these babies are the BEST pancakes i have ever had.  they’re so tender and perfect.  pancakes can’t get any better than this.  the key is in the buttermilk.  i’ve never understood why, but buttermilk always comes in pint size containers, nothing smaller.  when i make a recipe using buttermilk, i never use it all up.  i’m not going to complain about that anymore, though.  i’m going to make a batch of these. they’re pictured above, served tom-style with peanut butter and syrup. 3 c all-purpose flour 3 tbsp white sugar 3 tsp baking powder 1 1/2 tsp baking soda 3/4 tsp salt 3 c buttermilk 1/2 c milk 3 eggs 1/3 c butter, melted in a large bowl, combine flour, sugar, baking powder, baking soda and salt.  in a separate bowl, beat together buttermilk,...

hash browns

i’ve mentioned this before, but breakfast is my favorite meal of the day.  (i have a lot of food favorites.) 🙂  yesterday, tom and i made a wickedkillersweet breakfast with hash browns and breakfast burritos.  tom made the burritos and i made the hash browns.  it was a great way to start out the day! before i get into the hash browns, tom’s burritos consisted of ground breakfast sausage, green peppers, and cheese scrambled with eggs, wrapped up in a tortilla.  with a side of salsa, they were delicious! 3 c shredded hash brown potatoes, thawed 1/4 medium onion, finely chopped 1/4 c all purpose flour 1 egg 1 c oil for frying, or as needed salt and pepper to taste place ingredients in a bowl and toss until evenly distributed. heat about 1/4″...

sausage, biscuits and gravy

this is another tom dish.  he has been hungry for sausage, biscuits and gravy for a while.  last week, he got his wish. 🙂 biscuits: 4 c self-rising flour* 1 tbsp white sugar 1 tbsp baking powder 2/3 c shortening 2 c buttermilk 1/4 c buttermilk *  an alternate for self rising flour would be: 4 c all-purpose flour, 2 tsp salt, and 2 tsp baking powder, in addition to the 1 tbsp baking powder that’s already called for. preheat oven to 400°.  lightly grease two baking sheets. in a large mixing bowl, combine flower, sugar and baking powder; stir well.  cut in shortening until mixture resembles coarse cornmeal.  add 2 c buttermilk and mix just to moisten. roll out dough to 1″ thick and cut into biscuits.  place biscuits on prepared baking sheets;...

breakfast burrito casserole

happy new year, everyone!  breakfast is my favorite meal of the day, so i couldn’t think of a better way to start out the new year than with this kickin breakfast casserole. 🙂 1 tube breakfast sausage 1/2 medium green pepper, chopped fine 1/4 medium sweet onion, chopped fine 10 8″ flour tortillas shredded cheddar cheese, a lot of it and divided 1 1/2 tbsp flour 2 1/2 c half and half 8 eggs, beaten 1/2 tsp salt brown sausage in pan over medium heat, drain off excess grease.  fold in onions and peppers. place a good pinch of cheese in center of tortilla, top with 1/2 c of sausage mixture, roll and place into greased 9″ x 13″ baking dish.  repeat until pan is full. in a large bowl, whisk together eggs, half...
